Mix together oil, honey, salt and hot water. Then add cold water, 3 and 1/2 cups wheat flour and yeast. Mix together then let stand for 10 minutes. Add dough enhancer and additional flour – until dough separates from the sides of your bowl. Mix for a total of 6 or so minutes starting at the time you add the dough enhancer. Separate dough and shape into 5 loaves. Put in pans and let rise 30 minutes. Bake at 325 – 330° for 25-28 minutes. Allow to cool in pans for a few minutes before removing to cool on a cooling rack.

- 7 1/2 tsps of wheat gluten
- 2 1/2 tsps of lecithin
