Vegetable lasagna

Ingredients:

ADD TO LIST
  • 16oz ricotta
  • 2 eggs
  • 3 cups mozzarella cheese
  • 1 box of no Bake lasagna noodles
  • 1 bag of frozen spinach
  • 1 zuchinni
  • 1 squash
  • 1 can spaghetti sauce
  • Parmesan cheese

Instructions:

  • 350 for 30-45min with foil, 10-15 without
  • let set for 5-10 mins.
  • Spray 13×9 pan
  • mix eggs with ricotta, saute zucchini and squash
  • Add spaghetti sauce and spinach to zucchini and squash.
  • layer noodles 1/3 spaghetti sauce, ricotta mix, cheese (about 3 layers).
