Southwestern Crock Pot Chicken

Ingredients:

ADD TO LIST
  • 2 lbs boneless, skinless chicken breast
  • 12 oz. frozen yellow corn
  • 15 oz. canned black beans, drained and rinsed
  • 14.5 canned diced tomatoes, no salt added
  • 14.5 organic chicken broth
  • 1/4 cup fresh cilantro, chopped
  • 4 tbsp chopped green onion
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp sea salt

Instructions:

Spray crock pot with organic olive oil cooking spray.
Add chicken breast.
Add the remaining ingredients.
Cook on high for 6 hrs. or low for 8-9 hours.
Just before serving, shred the chicken and stir the mixture well.
Serving size: 1 cup


Notes:  Serve this dish over prepared brown rice or as a great chicken taco filling. Either way, it’s delicious! You can add some extra heat to this by doubling the cayenne pepper and chopping up one Jalepeno pepper and adding it to the mix.
