Southwest Chicken & Rice Bowls

Ingredients:

ADD TO LIST
  • 1 onion (chopped)
  • 3 boneless skinless chicken breasts (diced)
  • 1 (1 ounce) package Taco Seasoning
  • 1 (4.5 ounce) can green chilis
  • 1 cup salsa
  • 1 cup chicken broth
  • 1 cup long grain white rice
  • 1 (15 ounce) can kidney beans (rinsed and drained)
  • 1 (15.25 ounce) can corn

Instructions:

Combine ingredients in instant pot

Stir in rice so that it’s completely covered by liquid

Set instant pot for 10 minutes

Serve in tortillas or bowls with your choice of toppings
