Grilled Balsamic Chicken Pasta


  • 3 whole Chicken Breasts
  • 3/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tsp. dijon mustard
  • 1 tsp salt
  • 1/2 tsp fresh ground pepper
  • 1/2 tsp Coarse Grid Garlic Powder
  • 1 tsp dried basil
  • 1 cup roasted red pepper strips
  • 1 cup fresh basil
  • 12oz Penne Pasta


  1. Marinate boneless chicken pasta in ¾ cup vinegarette about one hour at room temp or several hours in refrigerator.
  2. Grill or broil breasts until done but tender.
  3. Cut breasts into strips. Cook pasta until aldente.
  4. Drain and toss with remaining marinade (may need to reserve some vinegarette to toss just before serving.

Best served at room temperature.
