Chicken Curry

Ingredients:

  • 1lb Chicken (cubed)
  • olive for cooking onions and garlic
  • 1/2 medium onion - diced
  • 1 clove garlic
  • 2 1/2 TBSP curry powder
  • 1 1/2 tsp cinnamon
  • 1 tsp paprika
  • 1/2 tsp salt
  • 2 TBSP Tomato Paste
  • 1 cup diced tomatoes
  • 1 can unsweeted coconut milk

Instructions:

Heat olive oil in a skillet over medium heat. Saute onion until lightly browned. Stir in garlic, curry powder, cinnamon, paprika, and salt. Continue stirring for 1 minutes. Add chicken pieces, tomato paste, diced tomatoes, and coconut milk. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes


Notes:  serve with brown jasmine rice or basmati rice
