Chicken Casserole


  • 1-2 boneless skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 1/2 cups instant brown rice
  • 1 cup shredded cheese (I use cheddar)
  • 1 bag frozen brocolli (optional)
  • topping: 1 tube ritz crackers and one stick of butter


I boil one or two boneless chicken breasts and shred it or you can use the canned chicken
cook the rice as directed on the box
mix the rice and chicken and then add remaining ingredients
spread in 8X11 bake pan

crumble the tube of ritz crackers
melt one stick of butter in microwave
mix and spread on top of rice

bake at 350 for 20-30 mins
