Bestest Easiest Chicken Curry


  • 1/2c Massaman Curry Paste (Mae Ploy)
  • 2 cans Mae Ploy coconut cream (not milk)
  • 1lb Chicken
  • 4c Carrots (diced)
  • 5 Potatoes (diced)
  • 1 can garbanzo beans
  • 1 red bell pepper


Cut Carrots, Chicken, Peppers and Potatoes into chunks (larger than bite-sized)

Cook Potatoes Separately (Microwave or boil them).

In Instant Pot – Whisk Curry Paste & Coconut Milk

Add Chicken & vegetables (minus potatoes) to curry paste & stir

Set Instant Pot to pressure cook (high) for 0 minutes

Quick release pressure

Stir in Potatoes

Mix with rice and serve

Notes:  Be sure you cut the vegetables large and the proteins (chicken) small.
